My Favorite Camping Recipes
Foil Packet Dinners are fun and easy when you’re in the great outdoors. They remind me of Girl Scouts when I was growing up in North Dakota. You can make them over the fire, a grill or in the oven. They can make for easy prep and clean up. Here are two of my go-to favorites. Use my favorite homemade seasoning recipes found here.
Ranch Bacon Chicken
4 Chicken Breast
1 Pound Small red potatoes sliced in half
1 sticked melted butter
Ranch Seasoning (homemade seasoning is equal to 1 packet)
1 Cup grated cheddar cheese
½ Cup cooked bacon crumbles
Salt and Pepper to taste
Instructions
Choose cooking method and preheat oven temp of 425° or medium high heat on grill.
Add seasoning to melted butter. Add uncooked potatoes and coat with mixture.
Spray tinfoil square with cooking spray and add chicken breast to the middle of tinfoil. Salt and pepper to taste. Divide potatoes evenly between the four packets. Drizzle remaining butter mixture over the top of chicken. Pinch the foil shut and make a pouch.
Grill for 30 minutes or bake in oven for 45 minutes.
Remove packets and add cheese, then return to cooking method until cheese is melted, then remove and add bacon crumbles. Serve warm.
Cajun Shrimp Foil Packets
6- full cobs of corn cut into thirds
4 -Red potatoes washed and cubed
25- uncooked peeled shrimp
1-pound smoked sausage cut into 1-inch chunks
½ cup of butter or olive oil
½ cup chicken broth
1 TBSP homemade creole seasoning (more if you like a little kick)
Instructions
Preheat grill or oven to 400°
Evenly distribute corn, potatoes, shrimp, and sausage between four heavy-duty foil sheets. Drizzle melted butter, 2 TBSPs of chicken broth and seasoning over each packet. Salt and pepper to taste.
Tightly seal foil packet and grill 30-40 minutes until potatoes are tender. You will want to flip the packet once during that grilling time. If you have trouble with potatoes not cooking within that time frame, cut the potatoes smaller or put them in the microwave for a minute or two before adding them to the packet.

Tacos aren’t the first food you think of when camping. But they are easy, fun and most of the work can be done before you leave. Make your own version of tacos in a bag.
Snack size bags of Fritos or Doritos
2 lbs. browned ground beef + 4 TBSP homemade taco seasoning
Shredded Cheese
Chopped lettuce
Diced Black Olives
Diced Tomatoes
Sour Cream
Guacamole
Just open a bag and add desired toppings. Add a fork and you are set for an easy meal. The best part is kids love them and the clean-up is easy.
